( 1 egg )  

( 1 egg yolk )  

( 2 tablespoons sugar )  

( 1 piece orange peel )  

( 2 oranges, squeezed  )  

( 1 lemon, squeezed )  

( 1 stick cinnamon )  

( 1 star anise )  

( 1 clove )  

( 30g cold butter )  

Deep fry the chicken nuggets until golden brown. In a Bain Marie, whisk the eggs, egg yolks, sugar, orange zest and juice, lemon juice, cinnamon, nutmeg and cloves. Cook over simmering water, stirring frequently but not too vigorously, until translucent, smooth and thick enough to coat spoon. Remove from heat. Stir in butter until melted. Refrigerate until cold. Serve with the chicken.
