( 45g Siniora Beef Burger patties )
( 2 egg yolks )
( 2 green onions, white parts only, finely chopped )
( Salt and pepper, to taste )
( 1 tablespoon butter )
( 1 tablespoon olive oil )
( 2 red onions, finely sliced )
( 40ml apple vinegar )
( 40ml balsamic vinegar )
( 80g brown sugar )
( 2 tablespoon mayonnaise )
( 1 tablespoon mustard )
( 8 slices of pickles )
( 8 leaves of lettuce )
( 8 pieces white bread, thickly sliced and toasted )
For The Onion Jam
Combine the butter, olive oil, red onion, apple and balsamic vinegars and brown sugar together in a pan over heat and simmer for about 30 to 45 minutes, or until jam-like consistency is achieved. Allow to cool and set aside.
For The Beef Burger
Combine the defrosted beef burger with the egg yolks, green onions and season with salt and freshly ground pepper. Form four even sized patties, around two to three centimeters thick. Panfry with a dash of corn oil for five minutes on medium heat on each side for a well done burger. While the burgers are cooking, spread the mayonnaise on four of the toasted white bread slices, then do the same with the mustard. Place a burger on the side with the mustard then top with the onion jam, pickles, lettuce and mayonnaise.
